Christmas Fruit Bread
Ingredients
9 Cup All Purpose Flour, divided
6 Teaspoon Baking Powder
3 Cup Vegetable Oil
1.5 Teaspoon Nutmeg
2.25 Teaspoon Rum Extract
1.5 Teaspoon Salt
2.25 Teaspoon Vanilla Extract
4.5 Cup Sugar
1.5 Cup Chopped Walnuts
3 Cup Candied Fruit
9 of Eggs
4.5 Cup Egg Nog
Steps
In a large bowl, beat eggs and oil. Beat in sugar extracts, and eggnog. Combine 2½ cups flour, baking soda, salt, and nutmeg. Gradually add to egg mixture. Toss the fruit with remaining flour, stir into batter. Fold in walnuts.
Pour into greased loaf pans of sizes:     1¼" × 4½" circular pan     5¾" × 3¼" × 2" rectangular pan
Bake at 350° for 50-55 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
